You'll need to edit the view. Navigate to Structure > Views, then click to edit the slideshow view. Under the Format section, click the Settings link that appears next to Slideshow. Check the 'View Action Advanced Options' box and make sure that "Make the slide window height fit the largest slide" is checked, then Apply the changes and resave the view. Note that you may need to ensure that Top Controls are still checked before saving (older versions of Views Slideshow have a wait of turning this off during edit).

That did it. I thought I had exhausted my search of views options... obviously I hadn't.
